St. Louis-style barbecue is a term used to describe several similar styles of cooking pork products. These foods are popular in our area and at Big Mama’s BBQ. We are pork LOVERS! We are known for our JUMBO pork steaks, cut from the shoulder. They come in weighing over 2 pounds! (Size does matter and we won’t apologize for that!) They are slow cooked for 4 hours and then sauced however you’d like.
St. Louis-style barbecue sauce is generally tomato-based, thinned slightly with vinegar, and usually sweet. It is not as sweet and thick as Kansas City-style barbecue sauce, nor as spicy-hot and thin as Texas-style. We have 4 different sauces; sweet & mild, sweet & spicy, spicy, and KICKIN’. BBQ just ain’t right if you don’t smother it in our delicious sauce! Would you believe that St. Louis leads the world in per capita BBQ sauce consumption? Pour it on baby!
